Hi, I’m Chef Matt DiPaolo

I am originally from Brooklyn in New York City. Growing up in an Italian American Household, Food was always at the forefront of any family gatherings. My Great Grandma Mary and Grandmother Josephine cooked every Sunday for the entire family including their children, grandchildren and great grandchildren. These Big Sunday meals always consisted of multiple courses and would last for hours while enjoying the company of close family members. This is where My food story begins.

My Passion for Food started at an early age with the love that was shown around the dinner table on a regular day in my house with my parents and brother, or the Big family meals on Sunday and other events. At age eleven I began learning to cook with my Mother Patricia and my Aunt Carolyn.

As I got older, I always had a passion for cooking and wanted to pursue a career in the culinary arts. I graduated from the Institute of Culinary Education and leapt head first into restaurant kitchens in New York City. Working with many amazing chefs and learning the Cuisines of Italian, Spanish, Thai and American as well as many others along the way. During Covid I started doing catering and working in more intimate settings.

As a Personal Chef, I love the ability to work with a client to bring their culinary wishes to fruition as I personally create menus that will delight them and their guests.

    Chef Matt Di Paolo was our Chef who MADE the occasion for our friend’s 70th birthday! He hand picked the ingredients, brought over much of his own equipment and cooked on-site dinner and brunch for our group of 20. The amount of food he provided was extremely generous beginning with a large assorted antipasti and lemony fruitti di Mari seafood salad (my favorite!). Next was the incredible Burrata salad that was humongous as well- you can begin to see size was a thing here! Clams casino, arancini, lasagna, chicken scarpariello all followed making this a delicious full-blown Italian meal. The following morning we had brioche French toast with a berry compote and the chorizo tacos were SO creative and memorable as well. Chef Matt will quickly feel like part of your event as he has a wonderful personality and engages well with all guests. You will be extremely satisfied with his food, charisma and professionalism and I would recommend him to friends, family, and anyone looking to have a small to large scale event as he is well suited for large catering as well!

  • "Chef Matt is truly a one of a kind chef"

    "Matt was an Absolutely Incredible Chef for our Wedding Weekend. He made us 4 different meals. My personal favorite was the Thai meal he made. He worked as the head chef at a Thai restaurant for many years, and it shows. The red curry was phenomenal. He made the red curry paste from scratch. Spring rolls aren’t normally my thing but he made them with some sort of sauce that blew all of our minds. The pad kee mao (drunken noodles) was some of the best I’ve ever had. 

    He also made us an Italian dinner, breakfast, and brunch. For brunch he made smoked salmon eggs Benedict, which was stellar.

    All in all, everybody was so happy with Matt, he really made our weekend complete. He accommodated every request we gave him, and exceeded every one of our expectations. We still have family members constantly reminding us of how amazing the food was.

  • "Above and Beyond our Expectations! "

    Chef Matty was Amazing for our Anniversary Weekend!

    We had a last minute event for 30 family members at our summer home in Leheigh Valley and he went Above and Beyond our Expectations! He made many appetizers including Arancini, Mozzarella un Corrozza and Tuna Tartare Bites (My Favorite) as well as a beautiful Charcuterie board.
    He gave our guests options to choose from for the entrees, Filet Mignon, Red Snapper and Eggplant Rollatini. I had the Snapper and it was so light in a lemon butter caper sauce and my husband had the Filet with a Red Wine Demi. The Food was Excellent and we felt like we were in a restaurant and not our own home!

    Chef Matty and his staff were very professional and polite, and they served and cleaned up everything before they left!

    We look forward to booking Chef Matt again in the future!
